Crabmeat au Gratin

1 stalk celery, finely chopped
1 cup onion
¼ lb. oleo or butter
½ cup all purpose flour
1 can evaporated milk (13 oz.)
2 egg yolks
1 teaspoon salt
½ teaspoon red pepper
¼ teaspoon black pepper
1 lb. crab meat
½ lb. grated cheddar cheese

Sauté onions and celery in oleo until onions are wilted.

Blend flour in well with this mixture.

Pour in milk gradually, stirring constantly.

Add egg yolks, salt and pepper, cook for 5 minutes.

Put crab meat in a bowl suitable for mixing and pour cooked sauce over crabmeat. Blend well and transfer to a lightly greased casserole dish.

Sprinkle with grated cheese.

Bake 10 to 15 minutes at 375 degrees.
